the perfect spring recipe
During my visit to Australia to see my family, I stayed with my cousin Maddie. We both love baking, and when she made these delicious lemon slices for a dinner party, I knew I had to try making them myself. They taste incredibly fresh and are perfect for spring and summer. Best of all, they’re easy to make and don’t require an oven. Let’s go!
Ingredients
Base
1/2 cup Sweetened Condensed Milk
100g butter
250g crushed scotch fingers
1 cup Desiccated Coconut
2 tsp grated lemon rind
1tsp lemon juice
Lemon icing
2 cups pure icing sugar
20g butter, softened
2 1/2 tbsp lemon juice
Step Guide
(1) On low heat combine the condensed milk and butter.
(2) Then add the mixture into the crushed biscuits and combine till mixed.
(3) Add the desiccated coconut and lemon rind and juice. Mix till smooth mixture.
(4) Press the base down into a tin and set a side while preparing the icing.
(5) Mix the icing sugar, butter and lemon juice together. If the consistency is too thick add some more lemon juice.
(6) Pour the icing over the base in the tin and let it set overnight in de fridge.
(7) Finally, decorate with some lemon rind and serve. Enjoy!
